Does a dirty restroom always mean that the kitchen is dirty? My opinion is no, but when there is a build up of grime in the bathroom then it will usually imply the kitchen is dirty. If that is the case then the management of the restaurant doesn't hold sanitation in very high regard. Also, is there plenty of soup and towels in the restroom? Those are the first things we think of. Next is the floor, just look down for a moment and look, is there debris on the floor?
Did they clean and sanitize the table or just wipe it off? How did they deliver you drinks, most importantly, did your server put their fingers on the rim of the glass. When they pre-bus a table and bring food out without washing their hands? When they pour coffee did your server touch your cup to the rim of the coffee pot then you're sharing the same germs with the other 300 hundred coffee drinkers of that day.
Do you see anyone in the kitchen touching food without using gloves? In most areas it is required that all food handlers must wear gloves if touching ready to eat products.
These are the things we look at.
